Nutrition?

There has been so may 'fad' diets, like Atkins, cabbage soup, South Beach, etc...
And many work, especially weight watchers BUT, many of these diets are not sustainable as too few calories are consumed. The body will slow the metabolism while in this 'starvation mode' and will store the calories as fat once a person goes off the diet and people will typically regain (and more) the weight they lost.
I am not a nutritionist but I have worked with nutritionists for over 20 years and am forced to learn a bit of their wisdom (through osmosis!). Atkins diet basically eliminates carbs, although they have a system called 'net carbs'. Net carbs is basically the total carbs minus the amount of fibre. So if an apple has 21 carbs and 2.6 grams of fibre, the net carbs would be 21-2.6= 18.4 net carbs. The problem with Atkins is it forces a person to increase their fat intake.

Recommendations are not consistent but roughly many agree on the following:
approx. 20% of your calories should come from fat.
approx. 15% of your calories should come from protein.
approx. 65% of your calories should come from carbs.
In the 20% fat total, only 7% of your total calories should come from saturated fat.
So, based on a 2,000/day calorie intake: 7% of saturated fat would be 140 calories divided by 9= 15 grams of saturated fat.
There are 9 calories per gram of fat. The other recommendation is to have 30-50 grams of fibre a day. Most people on an Atkins diet would be getting less than 10. The secret to weight control is not to 'diet' but rather to establish a 'healthy lifestyle' with plenty of fresh veggies, fruit. Low levels of saturated fats, zero levels of trans fats. Low sodium and high fibre and close to 2 litres of water a day. Avoid processed foods, especially fast food and processed meats, like sausages and bacon. These foods are very high in sodium and nitrates. Vegetarians need slightly more protein in their diets than non-vegetarians:
non-vegetarians need approx. .4 grams per lb of body weight.
vegetarians need about .5 grams per lb. of body weight.

Buy low fat milk, cheese. Buy whole grains. Buy deep green and deep orange veggies. Buy deep orange fruits and dark blue/purple fruits, like blueberries, blackberries, raspberries and cranberries. Avoid 'fizzy' drinks. Avoid deep fried foods.

Cityboy,
I've been racking my brain to try to figure out what you do for a living. Don't tell me, I like solving things and piecing things together. You've mentioned clients and students/professionals and (I think) portfolios.
And you worked with a woman who was a Diviner (I'm guessing in her spare time), and you worked professionally with nutritionists and you have knowledge of printing (4 color press).
Is it in the field of communication arts?
At first I thought a College art/design professor, then an architect, then maybe a photographer. But now maybe a graphic designer or art director.
And how did you end up where you live now, did you vacation there once and love it?

Hey JDH!

Schooled and started as a GD; now a AD/CD.

Very intuitive! As most of our clients rely on the internet, we can push jobs through by email. Occasionally, we have to drive into the big city. We loved the area; very rural but nearby towns with large stores, like Safeway or 'starbucks'! ; )

Another Fave tree of ours are the Hawthorn. I know there are small Hawthorn bushes, but we have a 'tree' which blooms in the spring and then produces berries for the birds later in the year.

Were you happy with your floorplans?

We use an airtight wood fireplace for most of our heat requirements. We don't have a mudroom or enclosed veranda so we are constantly opening the back door, letting in cold air, to get more wood for the fire.

An AD/CD, wow! I'm impressed. I was pushing myself to climb the ladder to AD and then decided to give film school a try. The week before I gave my notice, my boss of five years said they wanted to transition me into the AD position, but I had already enrolled in classes (unknown to them).

"Were you happy with your floorplans?" Well, considering that we gave him a floorplan that I drew up in Illustrator and that my wife and I talked over for a month before we met with the architect - you would think he would have kicked it out in no time. But this is the third floorplan in the past 6 months. Granted we're in no hurry and told him so. But he seems to be real resistant to use our design. So we told him after the second meeting to go back to it. He had huge, I mean insanely spacious bathrooms and closets - very different from the modest house I grew up in and very different from our original floorplan. Though we absolutely love the little things he has added to the design. Each time we've had him keep a lot of the "design" aspects he's brought to it.
We are getting closer to being happy with the floorplans. I think this next time we meet the plans should complete. I hope.

How many people know the difference between a GD, AD or CD? And of those people, how many love composting and know who Frank lloyd Wright is? And are intrigued with Macchu Pichu (sp?). And animation and chainsaws!

JDH: As you know Google bought Blogger and they want bloggers to switch to a google account. I did with my 'sawsee' and had no other option yesterday. I now see both my blogs are being posted and 'sawsee' has over-ridden my 'cityboyFarmer' profile. So much for keeping my two little worlds seperate.

And to add to the list - not many of them have rainbarrels too!!! Haha! And like LOST!

I'm assuming you have some kind of hobby store (not Hobby Lobby) nearby that sells scale model trains and hobby railroad stuff. They probably have stuff I designed packaging for, and a scenery manual (for train dioramas) I designed and did illustrations for. It was weird in LA, I walked into a hobby store and saw my stuff. Very strange.

I always wanted to be a CD, more so than an AD.

I'm not understanding the google/blogspot, nothing seems to have changed. Oh, your profile, I noticed that all your posts here were by sawsee. I thought that was strange.

I really wished I would have traveled the world, like you did. My wife has been all over the globe. This year we are suppose to go on vacation somewhere.

I have made six trips in the past two weekends hauling firewood out to the property. And each load was overflowing. So many people have lost trees due to the icestorm. I'm taking all the firewood I can get. I hate to see it go to a landfill, that's what the city is doing with it. Sad and ignorant.

Hi JDH! Do your rainbarrels freeze in the winter? I keep thinking I should drain them overwinter, but do like the thought of having 'emergency' water, if ever needed.

I'll keep my eye out for Hobby stores! The only project I did that went to the lower 48 (California), was an educational program for schools.

When I was in town in December/January I wished I had a large truck as numerous trees were left outside everyone's houses. Yes, all this wood was destined for the dump too!

We have dogs so our travelling has been very limited lately. I joke, that the dogs have forced us to save for our retirement plans by keeping us at home.

Some friends of ours have landed an interesting 'job'. They get paid to fly to numerous departure points for cruiselines. They then board for the cruise and spend about 4-8 hours a day teaching passengers how to email photos or set up blogs while on the ship. All their flights, meals, accommodations, and excursions are paid for. They don't get a salary but they have been all around the world. The last trip was from Japan-to China-to-Thailand-Singapore-India-Egypt-Suez Canal-Jordan and departure from Israel.
And a few others, I have forgotten. They have 'free' time at all ports-of-call. They are very social, and like meeting people, so their instructions do not feel like a job.

I guess I'll keep one 'identity' from now on...

I didn't empty my rainbarrels and now there are big chunks of ice. If I take them to the property I might only use them on the corners of the greenhouse. Right now we won't have gutters on the house.

Do you have poison ivy there? I greatly dislike it. I'm not sure how to get rid of it. I know it is "active" all year round and all parts of it are poisonous.

Would you have a house that is all one level or have a basement? How big is too big? We do not want a Mac-Mansion. I'm struggling with this a lot right now.

I recently reconnected with a friend of mine, he is living in Skegway, Alaska and is photographer and glacial tour guide. I thought that was an interesting job, however your friends probably have the best job ever!

Hi JDH! We rarely get poison ivy. I would try spraying it with vinegar ("20% vinegar"). Wearing gloves you can try pulling it out and then kill it by solarization (lay it on a black tarp and let the sun dry it out). Most people throw it in the garbage, and I guess this is one case when the landfill would be an acceptable use. You can try to outcompete it with a very vigorous grass or plant. Begin by covering it up (if the area is not too big) with cardboard, twigs, leaves, grass cuttings and finally soil. It will need to be at least 8" deep and then seed it with desired plants. We are growing comfrey which is an invasive plant but is a fantastic agent to promote composition.

Friends built their dreamhome and now the wife wants to move as it too much work for upkeep. I believe it is 4,000 sq.ft. on two levels (plus 3 car garage and workroom.

Our last house was 2900 sq. ft. including a 600 foot basement, plus garage and greenhouse/shed-- that was a nice size. We currently don't have a basement but miss one. I would either have a basement with access to both sides of house or a single floor house but with an attached garage/workroom and mudroom entrance. Our shed doubles as our workroom/basement but we need to go 'outside' everytime we need a tool (other than a few basics).

Alaska is on our 'places to see' list. I read an interesting book about a family that were the pioneers of the reindeer industry there.

How do you know so much - poison ivy, nutrition, compost, organic gardening and the list goes on?

JDH! My list of things I don't know is long! My wife and I got into gardening about 15 years ago. In fact, looking back now I think one of our first dates involved me helping her put in a small garden. Our obsession 'grew' from there. We tore out our lawn (Yes, the hard way...well, not the real hard-hard way; we rented a turf-remover) and had truckloads of compost delivered. We must have ordered at least 50 yards of compost and 15 yards of gravel. We ordered about $5,000 worth of plants, shrubs and trees and created an oasis!

One dumptruck load of 18 yards arrived, but the truck broke an axel before he could dump the load. We called a towtruck. An enormous towtruck arrived and the driver said he could still dump the soil. The towtruck then hoisted the dumptruck totally off the ground as if it was a toy. Then, with jerking motions the dumptruck was shaken, dropping all the soil where we wanted it. I wish I had my camera!

A 2500 sq. ft floor space is a nice size.
